Secondo uno studio condotto da gruppo di ricercatori australiani dell’University of Southern Queensland, i cui risultati sono stati pubblicati sul British Journal of Nutrition, la carota viola possiede eccellenti qualità anti infiammatorie, oltre alle già note proprietà anti ossidanti, e aiuta a correggere i danni causati da un periodo di stravizi alimentari.

Gli studiosi ne hanno infatti testato gli effetti sulla salute di  un gruppo di topolini da laboratorio a cui era stata somministrata dapprima una dieta ricca di grassi e carboidrati che aveva causato loro ipertensione, innalzamento dei livelli di glucosio nel sangue e disfunzioni del fegato e del cuore; dopo sedici settimane è bastato aggiungera alla loro malsana dieta, per i due mesi successivi, del succo di carote viola e tutto è tornato alla normalità.

Come spiega l’autore dello studio Lindsay Brown, professore di scienze biomediche presso la University of Southern Queensland:

Questo è un vero peccato perchè la carota viola, che altro non è che una carota che ha mantenuto il proprio colore originario, ha un contenuto di sostanze anti ossidanti, antocianine in particolare, ventotto volte più elevato delle più comuni carote arancioni. Un cibo del passato dunque che dovrebbe assolutamente diventare attuale.
