Il pomodoro (Solanum lycopersicum) è il frutto di una pianta annuale appartenente alla famiglia delle Solanacee (la stessa di patate e melanzane) originaria del Centro e Sud America. Il pomodoro, che era parte integrante della cucina azteca, fu introdotto in Europa nel 1540 dal conquistatore spagnolo Hernàn Cortés, ma la sua coltivazione si diffuse solo a partire dal XVII secolo, per lo più a scopi ornamentali. Per lungo tempo infatti si ritenne che le belle bacche rosse non fossero commestibili; in effetti  le parti verdi della pianta e i frutti ancora acerbi contengono una tossina, la solanina, non degradabile neppure attraverso la cottura, della quale però non resta traccia nel pomodoro maturo che risulta invece ricco di sostanze anti-ossidanti, sali minerali e vitamine A e C.

Coltivato soprattutto in Sicilia, Campania, Puglia, Calabria ed Emilia Romagna, il pomodoro trova largo impiego nell’industria conserviera, ma è diffusissimo anche consumato fresco in insalate e piatti freddi leggeri e gustosi. Il nome italiano si deve al colore dei primi frutti arrivati nel nostro continente, che si presentavano appunto di colore giallo oro, i quali furono successivamente soppiantati dalle varietà di colore rosso, mentre il nome di “pomo d’amore” diffuso in alcune regioni del sud Italia, si pensi al siciliano puma d’amuri, deriva dalle proprietà afrodisiache che gli venivano attribuite un tempo.

Quanto alle caratteristiche nutrizionali, il pomodoro fresco è un alimento poco calorico (100 grammi apportano in media 18 calorie), ricco di acqua e potassio che si distingue, come accennato, soprattutto per l’elevato contenuto di carotenoidi (sostanze dalle spiccate proprietà anti-ossidanti), in particolar modo licopene e beta-carotene.
