Sul mercato è sbarcato il pomodoro nero, da tutti ribattezzato come elisir di giovinezza. Ufficialmente si chiama Sun Black ed è una varietà di pomodoro selezionata nell’ambito del progetto Tom-Anto, finanziato dal Ministero dell’Università e della Ricerca e non da una società privata, come affermato in alcuni siti web, dal professor Pierdomenico Perata della Scuola superiore Sant’Anna di Pisa.
Il Sun Black si differenzia da altri tipi di pomodori aventi una colorazione molto scura, come il Kumato e il Nero di Crimea (che tendono al marrone scuro), non soltanto per la colorazione che tende al viola scuro, ma anche per il fatto che la pigmentazione è limitata alla buccia, mentre la polpa mantiene la sua normale colorazione rossa (il Kumato presenta la pigmentazione scura anche nella polpa).
La pigmentazione viola-nera del Sun Black è dovuta all’accumulo di antociani nella buccia. Gli antociani, normalmente assenti nel frutto di pomodoro, sono molecole antiossidanti presenti in molti frutti (uva nera, mirtilli, fragole etc). Il Sun Black, quindi, contiene sia il licopene di colore rosso e con proprietà antiossidanti),che gli antociani di colore viola e anch’essi con proprietà antiossidanti.
Il Sun Black non è Ogm, ma il risultato di un incrocio e presto arriverà sugli scaffali dei nostri supermercati. Un’azienda di Pisa, infatti, ha deciso di commercializzarli. Si tratta dell’Orto Fruttifero, specializzata nella vendita di piantine per orto. Sempre presso la stessa società gli appassionati dell’orto possono acquistare i semi al costo di 3-4 euro per 1 cartoccio contenente i semi sufficienti per coltivare un orto per 4 persone.
