Ci possono essere diversi motivi per sostituite il burro. Prima di tutto, come dovremmo sapere, seppur buonissimo è estremamente grasso e tende ad alzare il colesterolo. Il burro dovremmo completamente eliminarlo dalla dieta o concedercelo davvero di rado. Inoltre, se avete intenzione di convertirvi a un regime dietetico vegano, ricordiamo che trattarsi di un prodotto di origine animale. Pensiamo quindi a qualche soluzione vegetale, più salutare sotto tanti punti di vista.

Un classico potrebbe essere l’olio. Potete scegliere il tipo di olio, extravergine d’oliva, olio di semi di girasole, olio di riso che si prestano perfettamente anche cucinare per torte e crostate. Fare comunque molta attenzione al colesterolo.

Se avete bisogno di un prodotto cremoso ed addensante, puntate su una crema di origine vegetale, come quella di nocciole, anacardi o noci brasiliane o di macadamia e infine il tahin, la crema di sesamo. Sono eccellenti per condire i primi piatti a base di paste, gnocchi e ravioli.

Lo yogurt non ha origine vegetale ma è perfetto per rendere i nostri piatti cremosi. Provatelo nei dolci, regalerà alle vostre torte una consistenza decisamente soffice. Se poi desiderate una variante vegan, c’è quello di soia. La proporzione nelle ricette è per 100 gr di burro si utilizzeranno 125 gr di yogurt di soia.

L’avocado è un frutto della saluta, ricco di antiossidanti e di omega 3. Come si usa? Schiacciate la polpa matura con una forchetta fino ad ottenere un composto cremoso e morbido come il burro. Ha un sapore delicato e si può usare per preparare i dolci, che saranno decisamente più leggeri.
