Un piatto light: l’orata alla griglia

Proprio ieri mi sono deliziata con una buonissima orata, dalle mie parti i pescatori ne prendono diverse! L’orata, per chi non lo conoscesse, è un pesce prelibato, dalle carni bianche e saporite e con poche spine; questo si adatta benissimo anche ai palati più esigenti degli adulti e dei bambini. In cucina era molto usata sin dall’antichità, pensate che anche gli antichi romani la utilizzavano nelle loro cucina.

 

Ma di strada questo pesce ne ha fatta, tanto da arrivare persino in America molto in voga tra le diete dell’ultima ora. Uno dei modi di preparazione per mantenere il suo sapore gradevole è di cucinarlo alla griglia, magari accompagnato con un’insalatina delicata tipo l’insalata verde al lime e del buon vino bianco. E’ un piatto adattissimo all’estate, le calorie sono veramente poche, appena  205 per un pesce di 250gr.!

 

La preparazione alla griglia deve però seguire una serie di regole rigide tali da non coprire il sapore del pesce:

  • Ingredienti necessari: una bella orata fresca (ovviamente); aglio, prezzemolo, olio di oliva, spezie a proprio piacimento;
  • Pulite per bene il pesce, desquamatelo, toglietegli le viscere sotto l’acqua corrente;
  • Riempitelo con le spezie che avevate preparato in precedenza; massaggiate l’esterno con uno spicchio d’aglio e spennellate la superficie esterna dell’orata con un po’ di olio d’oliva cosi che la pelle non appiccichi alla griglia durante la cottura;
  • Accendete il fuoco a fiamma bassa, l’intera cottura dovrà avvenire a fiamma bassa/moderata!
  • Posizionate il pesce sulla griglia, giratelo spesso cosi da farlo dorare  da entrambi i  lati; la cottura non dovrà però eccedere i 15 minuti!
