Quali sono i principi chiave? Il nostro corpo è programmato per funzionare al meglio quando i liquidi organici (sangue, saliva, linfa, siero cellulare…) non sono né troppo acidi né troppo alcalini. Il pH ideale è tra 7 e 7,4. La verità però è la seguente: mangiamo male, siamo troppo stressati e ingeriamo troppe proteine animali. Il risultato? Produciamo liquidi organici troppo acidi e per tamponare questo problema utilizziamo alcuni minerali, come calcio, potassio e magnesio. Ovviamente il nostro fisico è programmato anche per questo, per evitare di tirare troppo la corda e soprattutto conservare energia positiva, bisogna cambiare alcune cose.
La dieta alcalina deve essere così organizzata: il 70-80 per cento deve essere costituito da frutta, verdura, alghe e legumi; il restante 20-30 per cento da carboidrati non raffinati (integrali, meglio di prodotti biologici e in chicco) e patate, noci, pinoli, carne, pesce e pollame. Le proteine animali non devono superare i 30 g al giorno, pari a una porzione di carne grande come una banconota da 10 euro. In più dovremmo consumare 300-600 grammi di ortaggi a foglia verde, ricchissimi di clorofilla, i più alcalinizzanti in assoluto. Ciò non vuol dire diventare vegetariani, semplicemente mangiare meno carne e soprattutto scegliere meno i cibi.
