Nella dieta macrobiotica, della quale vi abbiamo già illustrato i principi, anche la manipolazione, preparazione e cottura dei cibi rivestono un’importanza fondamentale per il mantenimento del loro equilibrio energetico, necessario per un buono stato di salute. Anche la scelta dei cibi che vengono consumati si fonda sul principio dello yin e dello yang: nelle stagioni e nelle zone climatiche calde, dominate dall’energia yang, è preferibile consumare alimenti vegetali, soprattutto quelli recanti energia yin, mentre è consigliabile il contrario nei periodi dell’anno e nelle regioni fredde (energia yin).

Quanto alla loro preparazione, i cibi macrobiotici, quali cereali integrali, ortaggi, legumi e alghe, vanno lavati molto accuratamente con semplice acqua prima di essere manipolati, mentre le radici e i vegetali che crescono per terra vanno  sfregati delicatamente con uno spazzolino di setole naturali appena prima di essere cucinati. Gli ortaggi si consumano lontano dai pasti e interi, ossia senza privarli di bucce, radici e semi.

Le pentole in rame e alluminio sono bandite dalla cucina macrobiotica poichè alterano l’equilibrio energetico delle pietanze. Si usano invece in tutta tranquillità pentole e utensili in acciaio inox, accanto alle pirofile in terracotta e ai cestelli in bambù per la cottura a vapore delle verdure. Mestoli e simili, così come le posate, dovranno invece essere in legno.

Poichè attraverso la cottura dei cibi è possibile indebolire o potenziare l’energia di cui sono portatori, il grado di cottura di ciascun alimento va regolato in base alle stagioni: maggiore in inverno, medio in primavera e autunno, lieve in estate. Quanto ai metodi di cottura, si predilige la cottura al forno, a pressione e al vapore.

Fra le tecniche macrobiotiche di preparazione di cibi spicca il nituké per le pietanze a base di verdure, consiste nel tagliarle molto finemente e cuocerle poi in olio e acqua fino alla totale evaporazione dei liquidi.
