Come leggere l’etichetta alimentare dei cibi confezionati

L’etichetta alimentare è presente per legge su tutti i cibi confezionati ed uno strumento importantissimo per la tutela del consumatore, in quando serve a sapere quello che mangiamo; sull’etichetta devono essere elencati in ordine decrescente di quantità tutti gli ingredienti di quel determinato cibo.

Sulle confezioni dei prodotti, oltre all’etichetta alimentare, è presente quella delle informazioni nutrizionali, ovvero una tabella relativa al valore energetico e al contenuto di proteine, carboidrati, grassi, sali minerali e vitamine, ogni 100 grammi di quel cibo; la tabella dei valori nutrizionali è ancora facoltativa, ma sempre più prodotti la riportano, mentre è obbligatoria nel caso di un cibo con una particolare caratteristica nutritiva.

Vediamo com’è strutturata l’etichetta alimentare e come leggerla. L’etichetta deve presentare alcune indicazioni standard come l’indicazione di vendita, che specifica il nome con il quale è conosciuto il prodotto, e come l’elenco degli ingredienti, riportati in ordine di quantità decrescente.

Questo elenco è particolarmente importante in caso di intolleranze alimentari, perché possiamo vedere se quella determinata sostanza è presente nel prodotto; non a caso, tra gli ingredienti sono compresi anche gli additivi e le sostanze aromatizzanti.

Nell’etichetta alimentare deve essere indicata anche la quantità in peso per i cibi solidi e in volume per i liquidi, ovviamente al netto della tara, e le modalità di conservazione e di preparazione; queste informazioni sono obbligatorie per legge e indispensabili per consumare il prodotto al meglio.

Anche le informazioni sulla scadenza sono obbligatorie, e generalmente sono indicate con la formula “da consumarsi entro il…”, che indica la data entro la quale il prodotto deve essere consumato; ovviamente, l’alimento non può essere messo in vendita dopo la data di scadenza indicata nella confezione. La dicitura “da consumarsi preferibilmente entro il …”, indica, invece, la data entro la quale il prodotto conserva le sue particolari proprietà. Infine, nell’etichetta devono essere riportati il nome e la sede del produttore o del confezionatore dell’alimento e l’indirizzo al quale è possibile contattarlo.
