Un’idea per un buon infuso oppure per una gustosa insalata è il tarassaco, chiamato anche “dente di leone” o “soffione”. Questo fiore si trova facilmente in questo periodo nei prati o ai bordi delle strade, ed è riconoscibilissimo per i suoi fiori gialli e le infiorescenze piumose a forma di palla che si disperdono se ci si soffia sopra.
La sua ricchezza nutritiva e la presenza di sostanze stimolanti della digestione ne fanno un aiuto prezioso per la salute: le foglie del tarassaco contengono una quantità incredibile di vitamina A, utilissima contro i problemi della pelle. Oltre alla vitamina A, il tarassaco fornisce anche alte quantità di calcio, e diverse sostanze ad attività ormonale.
Questi ormoni vegetali non solo possono aiutare a mantenere l’equilibrio dell’organismo, soprattutto se si soffre di mestruazioni dolorose o si sta attraversando la menopausa, ma svolgono anche un’azione anticangerocena.
In fitoterapia, più delle foglie si usa la radice; raccolta in primavera è tenera e succosa e la si può mangiare cruda in insalata, anche se ha un sapore piuttosto amaro, oppure cotta come per le altre radici bianche.
Numerosi studi hanno evidenziato che, grazie alla presenza di particolari sostanze amare, la radice del tarassaco stimola le funzioni epatiche e favorisce la prevenzione dei calcoli.
In erboristeria è possibile trovare anche la radice secca con la quale si può realizzare un infuso (3 grammi in 100 ml di acqua), da bere a sorsi lontano dai pasti per depurare l’organismo.
Chi è pigra e non vuole andare a cercarlo nei prati, può comprare il tarassaco anche dal fruttivendolo; le foglie crude sono davvero ottime in insalata come antipasto o come contorno, ma vanno bene anche aggiunte nelle zuppe a fine cottura. Proprio nelle zuppe, sono perfette su fette di pane integrali strofinate d’aglio e condite con olio extravergine; un’altra idea per gustarlo al meglio è passare le foglie al passaverdura per ottenere una soffice crema.
