Fermo restando che il gelato è un alimento altamente calorico e che va consumato con molta moderazione, in estate sono in molti a chiedersi se sia consigliabile comprare il gelato industriale o quello artigianale. Certo è più facile stimare la quantità delle calorie introdotte mangiando un gelato industriale, per il semplice motivo che le troviamo chiaramente indicate nell’etichetta, ma è più comune che quest’ultimo contenga addittivi, quali i grassi idrogenati, non esattamente amici della salute.
Le differenze fra gelato artigianale e gelato industriale infatti riguardano sia gli ingredienti che il metodo di produzione; mentre il gelato artigianale contiene solo ingredienti freschi (la base è costituita da latte, zucchero e uova), il gelato industriale è sempre addizionato con coloranti, stabilizzanti, aromi ed emulsionanti. Tuttavia è anche vero che il gelato artigianale può essere prodotto con ingredienti di scarsa qualità (si vedano i gelati preparati con basi liofilizzate analoghe alle preparazioni industriali) e talvolta contiene anch’esso degli addittivi, mentre è altrettanto possibile trovare prodotti di qualità anche tra i banchi del supermercato.
Se il metodo di produzione del gelato quindi non è una garanzia di qualità, l’unica per essere certi di acquistare un buon prodotto è controllare sempre molto scrupolosamente la lista degli ingredienti, che anche i gelatai hanno l’obbligo di esporre al pubblico. Meglio scartare come potete immaginare, sia i gelati che contengono grassi idrogenati che quelli che contengono qualità troppo elevate di oli vegetali (ve ne accorgerete perchè stanno in cima alla lista degli ingredienti).
In gelateria prestate molta attenzione anche alla consistenza del prodotto: un gelato cremoso è sicuramente di qualità superiore rispetto a un gelato acquoso, ma se non si scioglie molto facilmente questo indica la presenza di grassi idrogenati. Inoltre quando scegliete i gelati di frutta, assicuratevi che il gelataio abbia usato frutta fresca e non succhi o concentrati.
