La dieta volumetrica è stata elaborata negli Stati Uniti da Barbara Rolls e Robert Barnett in collaborazione con l’Eating lab in Pennsylvania. Si tratta di un programma dietetico particolarmente adatto a chi ha sempre molto appetito e non riesce a seguire una qualunque dieta dimagrante poichè ciò lo rende cronicamente affamato.

Questo tipo di dieta, introdotta con qualche variazione nel nostro paese, si fonda  sul potere saziante, a parità di calorie, di alcuni cibi rispetto ad altri. Secondo i suoi ideatori infatti il necessario controllo delle calorie è facilitato dalla scelta di cibi con un’elevata capacità saziante, quali frutta, verdura, ortaggi e legumi e questo “stratagemma”  consentirebbe di ottenere il tanto desiderato dimagrimento principalmente tenendoci alla larga dalle tentazioni.

Più precisamente, la valutazione di quali alimenti sia più opportuno consumare avviene in base al calcolo della loro densità calorica, che si ottiene dividendo il numero delle calorie apportate da ciascun alimento per il suo peso in grammi: più bassa è la densità calorica, maggiori sono le porzioni di quell’alimento che si possono consumare senza preoccuparsi di prendere peso.

La Rolls, nutrizionista presso il Laboratory for the Study for Human Ingestive Behaviour della Pennsylvania State University e autrice del libro The volumetrics eating plan, ha testato il proprio programma alimentare su 97 donne obese: un primo gruppo seguiva la dieta volumetrica basata sul consumo di vegetali, zuppe, latticini, carne e pesce magri a volontà, un secondo gruppo era invece tenuto ad osservare una tradizionale dieta dimagrante caratterizzata dalla riduzione dell’apporto di grassi.

Al termine dello studio le donne del primo gruppo registrarono un calo di peso pari al 33% in un anno a fronte del consumo di maggiori quantità di cibo rispetto alle donne del secondo gruppo. In altre parole, erano riuscite a realizzare il sogno di tutte le donne: dimagrire mangiando!
