Per questo vanno consumate con moderazione, diciamo in dosi di 10 o 15 grammi al giorno.
Le mandole amare non sono adatte all’alimentazione, in quando contengono un glucoside tossico; in dosi piccolissime e assolutamente innocue vengono usati gli estratti dei suoi semi per la produzione di alcuni dolci come gli amaretti. Le mandorle in guscio debbono essere conservate in un luogo fresco e asciutto, e in queste condizioni ambientali resistono qualche mese; quelle senza involucro deperiscono più velocemente e quindi devono essere conservate all’interno di un vaso chiuso.
