Nonostante il termine inglese “roast beef” significhi semplicemente arrosto di manzo, è consuetudine nel nostro paese adoperarlo per indicare un particolare tipo di arrosto a cottura breve ottenuto da tagli di carne molto magri (di solito costata, controfiletto, girello o scamone). E’ facile trovare il roast beef già pronto, arrostito, condito e persino tagliato a fette sottili tanto dal macellaio, quanto presso gastronomie e supermercati.
Si tratta infatti di una pietanza comunemente ritenuta salutare e poco grassa e viene quindi scelta sovente dalle persone che dovendo pranzare ogni giorno fuori o non avendo abbastanza tempo per cucinare non vogliono appesantirsi troppo o rischiare di prendere peso mangiando la prima cosa che capita.
In effetti, se non si tenta di insaporirlo con l’aggiunta di altri grassi (è comune trovarlo avvolto nella pancetta) e non si eccede nei condimenti, un piatto di roast beef consumato rigorosamente freddo con contorno di verdure può davvero permetterci di pranzare in modo nutriente e poco calorico anche al ristorante o in gastronomia.
Una porzione di roast beef da 100 grammi infatti apporta mediamente circa 150 calorie (raramente al ristorante si riesce a mangiarne quantità superiori ai 150 grammi) e contiene una percentuale di grassi pari a circa il 3-4% ( i valori naturalmente cambiano in base al taglio di carne prescelto).
Tuttavia, quanto più magro è il taglio di carne da cui è ottenuto quanto più il suo sapore rischia di risultare sin troppo delicato. In questo modo la tentazione di arricchirlo con una quantità importante di olio extra-vergine di oliva o con sughi e condimenti è sempre in agguato, vanificando così gli sforzi di chi lo preferisce ad altri tipi di arrosto per il suo potere calorico contenuto. Per questo motivo se si decide di prepararlo in casa è opportuno limitarsi all’aggiunta di solo sale ed erbe aromatiche e di un filo di olio per fetta.
