Sicuramente tutti avrete bevuto il classico tè freddo in bottiglia: una bevanda buona e rinfrescante, da gustare soprattutto durante gli assolati pomeriggi d’estate.
Se fino ad adesso al tè in bottiglia veniva imputata la sola colpa di contenere zuccheri, una ricerca condotta dalla società biotecnologica “WallGen” ha evidenziato il fatto che il tè in bottiglia non sarebbe sano quanto quello naturale, in quanto non conterrebbe tutti i polifenoli, ovvero le sostanze antiossidanti che in genere sono pubblicizzate in associazioni a questi prodotti. I risultati di questa ricerca sono stati presentati al convegno nazionale dell’American Chemical Society di Boston.
Il punto di forza di queste bevande è la loro capacità di essere molto attraenti per i consumatori, grazie al gusto più dolce rispetto alla semplice infusione del tè.
Ecco come spiega il fenomeno del grande consumo del tè in bottiglia, il dottor Li Shiming, coordinatore della ricerca:
I consumatori capiscono molto bene che il consumo di tè e di altri prodotti hanno benefici per la salute, tuttavia esiste un ampio divario tra la percezione dei benefici del consumo di tè e la quantità di nutrienti sani, come i polifenoli, che si trovano nel prodotto confezionato. La nostra analisi ha determinato che in questo caso il contenuto di polifenoli è estremamente basso.
Dallo studio della “WallGen” è emerso che il tè imbottigliato contiene solo 10 milligrammi di polifenoli, a fronte dei 50 o 150 mcg. di una classica tazza di tè; questo contenuto così basso si spiega con il fatto che, pur essendo dei buoni antiossidanti, i polifenoli sono astringenti e amari, e così i produttori di bevande in bottiglia decidono di diminuirne la presenza per ottenere un tè dal sapore più piacevole.
Per ridurre il numero dei polifenoli, secondo il dottor Li Shiming:
il modo più semplice è quello di aggiungere meno di tè e quindi diminuire la presenza delle sostanze che rendono la bevanda benefica per la salute.
