Odiati, raccapriccianti, spesso talmente fastidiosi da richiedere trattamenti chimici per debellarli, eppure secondo gli esperti gli insetti potrebbero rappresentare la soluzione più accreditata per risolvere il crescente fabbisogno alimentare del pianta. E’ quanto ha sostenuto il professore palermitano Paolo Inglese, presidente del Comitato Coordinatore del Corso di Laurea in Scenze e Tecnologie agroalimentari, che ha promosso il convegno dal titolo “Insetti a tavola? I Novel Food e le frontiere dell’alimentazione umana”.

Gli insetti potrebbero quindi diventare una valida fonte di proteine e una risposta ai bisogni alimentari della popolazione mondiale. Il perchè è presto detto: secondo la comunutà scientifica entro il 2050 la popolazione mondiale supererà la cifra dei 9 miliardi di persone, per le quali sarà necessario trovare nuove fonti di approvigionamento alimentare.

Secondo gli esperti gli insetti sono una possibilità da non sottovalutare perchè forniscono cibo a basso impatto ambientale, sono compatibili con la dieta umana e sono anche nutrienti perchè forniscono proteine e minerali.

Ancora l’allevamento degli insetti a scopo alimentare è un settore di ricerca allo stato embrionale ma non è detto che in futuro non diventi una vera e propria azienda alimentare. E per dimostrare che gli insetti sono anche buoni da mangiare, durante il convegno si è svolta la degustazione di alcuni piatti a base di farine derivanti da due insetti: il grillo e la camola. Le farine sono state anche utilizzate per creare altri elaborati alimentari che sono stati sottoposti al giudizio degli assaggiatori per verificare attraverso analisi statistiche il gradimento di questo tipo di prodotti.
