Il saccarosio è uno zucchero raffinato e “impoverito” e, se si eccede con le quantità, può creare dipendenza. Ecco perché va limitato nella dieta dei più piccoli, sostituendolo se possibile con dolcificanti più sani. La voglia di dolce è comune negli adulti e quasi irresistibile nei più piccoli, che nella stragrande maggioranza dei casi apprezzano di più questo tipo di gusto rispetto a quello salato. Una preferenza che può essere considerata quasi innata nell’organismo umano, e che si collega al sapore del primo alimento in assoluto, il latte materno; ma anche la risposta istintiva al bisogno dell’organismo di produrre energia, attraverso il “carburante” fornito per l’appunto dagli zuccheri.
Come per tutte le categorie alimentari, insomma, anche gli zuccheri sono indispensabili per un corretto funzionamento dell’organismo, sia per quanto riguarda i cosiddetti “zuccheri complessi” forniti dai carboidrati (come pane, pasta, patate…) a più lungo assorbimento, sia per quanto riguarda gli “zuccheri semplici“, che forniscono energia immediatamente disponibile: una famiglia di sostanze (fruttosio, glucosio, lattosio, galattosio) di cui il principale esponente è il saccarosio, cioè il normale bianco zucchero bianco da cucina.. Il problema riguarda soprattutto le quantità: lo zucchero, infatti, ha un apporto calorico molto elevato (un grammo fornisce circa 4 calorie) e più se ne aumenta il consumo più il palato si abitua al suo sapore, innescando un fenomeno di dipendenza che fa incrementare sempre di più le dosi di zucchero ingerito.
Quanto zucchero possiamo dunque permettere a bambini e ragazzi? In linea di massima, da 30 a 60 grammi al giorno per i più piccoli, e fino a 70/80 grammi per gli adolescenti, cercando in ogni caso di privilegiare lo zucchero più “naturale”, ovvero quello grezzo integrale di canna: oltre alle calorie, questo zucchero contiene anche preziosi nutrienti e ha un sapore più naturale, che non crea dipendenza dal dolce. Bianco o scuro? La zucchero di canna è spesso ritenuto più salutare rispetto allo zucchero bianco; ma quali sono le effettive differenze?
Innanzitutto l’origine: mentre lo zucchero bianco proviene dal succo della barbabietola da zucchero (sottoposto a varie fasi di raffinazione), quello di canna è invece ottenuto dalla spremitura della canna da zucchero, il cui succo viene filtrato e centrifugato a freddo. Si ottiene così lo zucchero grezzo di canna, che risulta leggermente meno calorico ma più ricco di sali minerali. Nella sua versione integrale e biologica, questo zucchero non crea assuefazione al sapore dolce.
Non va confuso con il falso zucchero di canna spesso venduto nei supermercati, che in realtà è zucchero bianco “scurito” col caramello. Una notevole quantità di zuccheri semplici si trova “nascosta” in moltissimi alimenti: basta una lattina di aranciata per incamerare oltre 30 g di zuccheri; ed è sufficiente una mela o una banana di media grandezza per assumerne altri 20/25 g, senza contare le vere e proprie “bombe” zuccherine, come le caramelle dure e i lecca lecca, il cui contenuto di zuccheri è superiore al 90%.
