Vi abbiamo già illustrato per sommi capi i principi e le regole su cui si fonda la cosiddetta dieta macrobiotica. Oggi ci occuperemo di vedere nel dettaglio quali cibi sono permessi e quali vengono invece esclusi in un regime alimentare di questo tipo.
Come abbiamo già visto, la dieta macrobiotica esclude i cibi sottoposti a processi di raffinazione e sofisticazione industriale e prevede il consumo preponderante di alimenti quali legumi, cereali integrali (frumento, riso, orzo, avena, miglio, grano saraceno, segale, mais, kokoh e arrowroot), frutta e verdura di stagione e biologica, semi oleosi (zucca, sesamo e girasole). Il consumo di carni e pesce è ammesso, seppure con molta parsimonia. Per questo motivo l’alimentazione macrobiotica non rientra nel novero delle diete vegetariane.
Unici condimenti permessi sono il sale marino integrale, la salsa di soia, l’olio di semi solo se spremuti a freddo e l’olio di oliva. Non sono ammessi i dolcificanti fatta eccezione per zucchero di canna e sciroppo d’acero o di riso cui si ricorre comunque con molta moderazione.
Allo stesso modo, la dieta macrobiotica esclude totalmente i grassi di origine animale come il burro e lo strutto, mentre è possibile impiegare in cucina degli analoghi come il tahin (una crema di semi di sesamo) e il gomasio (sale marino e semi di sesamo tostati e triturati).
Elemento che contraddistingue la dieta macrobiotica è il consumo regolare di alghe, soprattutto Iziki, Wakame, Combu e Dulse, e radici conservate.
Non sono ammessi alcolici, bevande zuccherate e caffè. Quest’ultimo può essere sostituito con il tè o con bevande che ne rappresentano dei surrogati, quali il dendelio (bevanda ottenuta dalla torrefazione di radici di tarassaco e cicoria) e il jannoh (ottenuto dalla torrefazione di soia, frumento, bardana e radici di tarassaco).
Come avrete notato molti cibi macrobiotici provengono dalla cucina tradizionale giapponese: oltre a quelli già citati (salsa di soia, alghe, radici, tahin, gomasio) tra questi troviamo il tofu (formaggio ottenuto dal latte di soia), il miso (miscuglio di semi di soia gialla e cereali usato come condimento) e i fagioli azuki.
