Già ieri abbiamo parlato di stress e alimentazione e degli effetti deleteri della tensione sul nostro organismo, sottolineando come certi cibi siano in grado di proteggere la nostra salute da ansia e nervosismo.
Tra questi alimenti, abbiamo scelto di trattarne uno particolarmente gradito a tutti, ovvero il cioccolato fondente che, secondo una ricerca condotta dal Nestlé Research Center di Losanna, in Svizzera, contiene alcune sostanze in grado di ridurre i livelli di stress.
La ricerca, pubblicata sul “Journal of Proteome Research” è stata condotta con l’ausilio di 30 pazienti adulti e sani, catalogati secondo i diversi livelli di ansia dedotti dalle risposte fornite in alcuni questionari. Ai pazienti sono state date due porzioni da 20 g. al giorno di cioccolato fondente per 14 giorni, al termine dei quali gli scienziati hanno osservato come il metabolismo dei volontari rispondeva al consumo del cioccolato fondente con particolare attenzione ai cambiamenti metabolici legati allo stress come i livelli della microflora intestinale e del metabolismo energetico.
Dalle analisi, infatti, è emerso che il cioccolato fondente era stato in grado di normalizzare le differenze legate allo stress proprio nelle attività del metabolismo energetico e della flora intestinale, in quanto questi due fattori possono essere regolati dalla dieta. Il dottor Sunil Kochhar, coordinatore dello studio Nestlè ha spiegato:
Il consumo giornaliero di cioccolato fondente può impattare positivamente sul metabolismo delle persone che dichiarano di avere alti livelli di stress. Queste scoperte supportano con forza i nostri sforzi tesi ad accertare l’impatto di certi alimenti sul metabolismo umano attraverso la modifica delle attività della flora intestinale.
Dopo i 14 giorni di trattamento nei pazienti è stata accertata una diminuzione dei livelli degli ormoni dello stress, soprattutto nei soggetti più ansiosi, mettendo anche in evidenza che gli antiossidanti presenti nel cacao amaro sono in grado di ridurre i fattori di rischio delle malattie cardiache e di altre patologie.
