L’albicocca è il frutto dell’albicocco, arbusto originario della Cina orientale appartenente alla stessa famiglia botanica di ciliegie e pesche. La sua coltivazione risale a circa 4000 anni fa e sembra che sia giunto fino a noi grazie ad Alessandro Magno che fu il primo a portarne alcuni esemplari in Grecia dall’Asia.
Oltre ad essere semplicemente deliziosa, come d’altra parte tutta la frutta di primavera, l’albicocca è un frutto che si distingue anche per le sue notevoli caratteristiche nutrizionali che la rendono, fra l’altro, una formidabile alleata per la nostra bellezza. Forse infatti non tutti sanno che le albicocche contengono dosi notevoli di potassio e carotene, nutrienti essenziali per ripristinare i liquidi perduti attraverso la sudorazione (potassio) e per favorire un’abbronzatura omogenea e duratura (carotene) cui si aggiungono un buon quantitattivo di vitamine (A, B, C e PP) e sali minerali (magnesio, fosforo, ferro, calcio).
Se consumate fresche inoltre le albicocche hanno un contenuto calorico abbastanza modesto a fronte di un elevato potere saziante e di una efficace azione regolatrice delle funzioni intestinali, dovuta alla presenza di fibre e sorbitolo, e possono benissimo essere consumate nell’ambito di una dieta ipocalorica o rappresentare un ottimo spuntino “dietetico” e dissetante anche in piena estate; il momento ideale per acquistarle fresche (e non di importazione) è infatti quello compreso fra maggio e luglio inoltrato. Tuttavia, per essere apprezzate fino in fondo e godere appieno delle loro benefiche caratteristiche, le albicocche devono essere acquistate ben mature ed essere consumate entro pochi giorni; è opportuno inoltre che la loro provenienza sia locale poichè il trasporto le danneggia e deperiscono molto facilmente.
In alternativa è possibile consumarle essiccate dal momento che questo processo di conservazione ne lascia pressochè inalterati i valori nutrizionali, mentre è del tutto sconsigliabile, a meno che non si voglia attentare alla propria linea, mangiare le albicocche sciroppate.
